MY SWEET JOURNEY
My name is Jade Lee, and I am an award-winning cake designer and sugar artist based in St Louis, Missouri. I am passionate about creating edible works of art for special occasions including weddings, baby showers and birthday parties. I also teach cake decorating and sugar-flower making internationally.
I grew up in Taiwan and completed my graduate degree in business at Imperial College in London. From a young age, baking and art have been my hobbies. Not long after starting a career in the financial world, I signed up for my first cake decorating class as the de-stress getaway from my work life. It is easy to guess what happened…I felt like cake decorating was my calling. I love people’s smiles when they are amazed by my cakes. In 2014, I decided to follow my true passion and fully dedicate my self to a cake career. That is how my sweet journey began.
This entry is celebrating the rich culture diversity of Taiwan by using different flowers to represent different cultures such as indigenous Taiwanese culture, Japanese culture and Chinese culture. This flower arrangement as a whole depicts a utopian image, in which people with different backgrounds are cheerfully dancing in concentric circles and celebrating indigenous Taiwanese Harvest Festival.

This work is inspired by the lively semi-tropical atmosphere of the Formosa. The flowers and foliage of this work are often seen in the gardens, atriums or even on the roadside since they can grow strongly under all kinds of conditions. The rustic water can, which is made of sugar, is from my precious childhood memories of my grandmother’s house. The arrangement of this bouquet recreates a warm garden scene and celebrates the strength of life.

Welcome to the Fairy Terrarium. In this delicate small garden, the tropical orchids, the exotic foliages, and the fairies all live together. Due to the help from the fairies, the flowers and the foliages stay blooming and green all the time. Every day when the night comes, the fairies show up and fly around these beautiful flowers and leaves. They sprinkle the magic powder on these plants. That is the secret of why all the plants in this terrarium never grow old.Although the fairies are too tiny to be seen by human eyes, you can find the lights twinkling in the dark when they are using their magic.

This work is about celebrating Lunar New Year and Spring Festival through Japanese art of flower arrangement. The design is inspired by a type of Japanese flower arrangement, which emphasizes uneven numbers, asymmetry in the arrangements and the importance of space. The shallow container is made by a pile of irregular-shaped wafer papers. The stripe texture of this container represents the flow of water. Chrysanthemums, Cherry blossom and Rex Begonia are all common decorations during the Lunar New Year and Spring Festival. As a whole, the goal of this design is trying to create a link between modern and tradition by reproducing the ancient Japanese art of flower arrangement with a new medium-sugar.
The round-shaped branches indicate the lively ecological cycle of Florida. The orange blossoms and fruit show the richness and fertileness of Sunshine State. The singing Northern mockingbird, the state bird of Florida, flies the energetic spirit of Florida. All elements are connected as a harmonious circle.

BEST USE OF LIGHT
In the Dark Chocolate Forest, you may see a mythical treehouse with spooky purple lights from the windows. This treehouse is very different since it is alive. It can move, jump and run. It likes playing scare pranks such as standing still for a long time and attracting curious animals come closer. When those innocent animals get close enough, this naughty treehouse would suddenly move its arms and legs or even chasing those poor animals around. If you happen to come across this treehouse in the Dark Chocolate Forest, remember to stay alert.
